Typical food of Cajamarca

When arriving to Cajamarca, don´t forget to try the following typical plates of the region:

"Cuy con papa" (Guinea pig with potatoes): 
Traditional plate, prepared with guinea pig fry served with creamy potatoes.

"Verde de Papa" (Potato soup): 
Juicy soup, prepared with potatoes, eggs, cheese, spiced with wormseed (paico) leaves, herbs, parsley and hot chili pepper.

"Humitas"
Delicious plate prepared with corn that had been milled, when it is creamy, cheese and butter are added, wrapped in corn leaves and boiled.

Being Cajamarca an excellent cattle raiser, you may find a variety of delicious cheeses.

Desserts

The most demanded dessert of the region is "manjarblanco", prepared with dairy milk, cinnamon, sugar and potato starch.

Fig dessert: Figs cooked with "chancaca" (sweet prepared with sugar cane).

The most popular and traditional drink of the region is "chicha de jora" and among the populace "llonque", kind of rum.
